⅓ C All Purpose Flour
⅓ C Cornmeal
2 T Coconut Sugar
½ tsp Baking Powder 1 Pinch Baking Soda 1 Pinch Sea Salt
⅓ C Buttermilk
1 T Coconut Oil
1 Large Egg
3 Nitrate Free Hotdogs
Cut Into 1” Slices
1.Preheat oven to 375ºF and spray a 12-cup muffin pan with non-stick spray.
2.In a mixing bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda and salt.
3.In a separate mixing bowl, whisk together buttermilk, coconut oil, and egg.
4.Whisk wet ingredients into dry until combined.
5.Fill muffin cups ¾ full.
6.Press 1” hotdog into center of batter before baking. Bake until golden brown and a toothpick inserted next to hotdog comes out clean, about 20 minutes.
