Banana Apple Muffins

My hubby (who is actually quite the cook when he wants to) made these today. My kids ate half of them within the first hour so I would say they are ‘kid-approved’




2 ripe bananas mashed
2 large eggs, beaten
1 1/2 cups almond flour
3/4 tsp baking soda
Dash of himalayan salt
1/2 cup or roughly 3/4 apple chopped (skin on)
1 Tbsp organic grass fed butter, melted


1.Preheat oven 350 degrees
2. Spray muffin tin with coconut oil cooking spray or liners
3. Combine eggs, banana, butter (optional) into bowl and mix well
4. Combine almond flour, baking soda, and salt in a medium bowl, mix well.
5. Combine both bowls of ingredients together and mix until blended
6. Add chopped apple and mix
7. Divide batter evenly into muffin tins (mine made about 10 muffins)
8. Bake 18-22 minutes or until golden brown
9. Cool and Enjoy!
