Chocolate Chip Cookies


3 cups almond flour
1 tsp baking soda
1/4 tsp Himalayan salt
1/4 cup extra-virgin coconut oil, melted
1/4 cup pure maple syrup
1 large egg
1 egg white
1 mashed rip banana
1 tsp pure vanilla extract
1/2 cup mini chocolate chips


  1. Preheat oven to 375F
  2. Line baking sheet with parchment paper
  3. Combine almond flour, baking soda and salt. mix well and set aside
  4. Beat oil and maple syrup in large mixing bowl until creamy, 4-5min
  5. Add eggs, egg whites and mashed banana and extract and beat from another 2 min
  6. Add almond flour mixture to egg mixture and mix until blended
  7. Fold in chocolate chips.
  8. Drop 1 tbsp onto pan and form into flat cookie shapes. Bake 14-16 minutes or until golden
  9. Store in air-tight container

TIP-you can make your own almond flour by processing 1 cup of silvered almonds in a food processor. Pulse in 20 sec intervals so it doesn’t turn into almond butter.IMG_7091.jpg
