I love these as a quick grab-and-go breakfast or snack! Pair with some whole grain toast or oatmeal and fruit and you have a complete meal.
- low-sodium turkey bacon
- parchment paper cups
- Preheat ove to 350F
- Line muffin tin with parchment paper cups (as many or as little as you want, I usually do a bunch and have them in the fridge for the week and reheat when needed)
- Wrap 1 piece of turkey bacon around the inside of parchment cup
- crack egg in middle
- Bake for 15-20min or until firm
