Egg Cups

I love these as a quick grab-and-go breakfast or snack! Pair with some whole grain toast or oatmeal and fruit and you have a complete meal.

INGREDIENTS:

  • Egg
  • low-sodium turkey bacon
  • parchment paper cups

INSTRUCTIONS:

  • Preheat ove to 350F
  • Line muffin tin with parchment paper cups (as many or as little as you want, I usually do a bunch and have them in the fridge for the week and reheat when needed)
  • Wrap 1 piece of turkey bacon around the inside of parchment cup
  • crack egg in middle
  • Bake for 15-20min or until firm
