I try and cook at least one all vegetarian meal per week. Tonight I was crunched for time due to a late afternoon appointment, so I had to whip up something quick before the dinner-time meltdown happened.
Thank goodness for stir-fry’s.
You basically cook a bunch of veggies (using whatever you have that needs to be used up in the fridge) add a protein (tonight was tofu) and bam…dinner is served. I tossed the tofu in a bit of low-sodium soy sauce, fresh garlic, ginger, sesame oil and a bit of raw honey. Simple and delicious. Served mine with a bit of basmati rice cooked in broth and the kids were satisfied (+ lunch left-overs — double save on time!)
